Slow Cooker Honey Ginger Lime Pork – Cooking with Gina

Ohhhh it’s that time of year again that my slow cooker comes to live on our kitchen bench.

The weather is a little cooler but also as the kids are back at school, having meals prepped and ready to go into the slow cooker in the morning, so that you can come home to it already cooked in the afternoon is just the best feeling! It is perfect for busy people, families or even singles and couples.

For this recipe we are using some delicious free range pork. I have to encourage you all to please look out for Australian Grown Pork, as there is still a majority of the pork sold in Australia that is imported. Let’s support our local farmers and even better, our free range farmers!

One of my favourite things to cook in a slow cooker is pork. There is just nothing better than a free range pork roast that is slow cooking all day in a delicious marinade. The pork cooks to perfection and is just melt in your mouth tender. You can never go wrong with a honey, soy, garlic, and ginger infused marinade. But I love adding lime to the marinade to give it that added tangy flavour. Plus the acidity helps to keep the pork tender as it cooks.

Slow Cooker Honey Ginger Lime Pork

Ingredients

  • 1.2kg pork shoulder
  • 1 Tablespoon Olive oil*
  • Salt and Pepper
  • Honey Lime Ginger Marinade
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 1 Tablespoon Worcestershire Sauce
  • Juice of one lime
  • 2 garlic cloves minced
  • 1/2 teaspoon ground ginger or 1 Tablespoon fresh ginger
  • 2 Tablespoons cornstarch

Optional garnish: Fresh lime wedges & chopped coriander

Instructions

  1. Place the pork into the bottom of a slow cooker. If you have a SEAR setting, you can use this with some oil to sear the outside of the pork first. (If you have time you can also do this in a frypan).
  2. In a small bowl whisk together the honey, soy sauce, Worcestershire sauce, juice of one lime, garlic cloves, and ginger. Pour the marinade over the pork. Let cook 6-8 hours on low and 4-6 hours on high or until thermometer reads 160 degrees.
  3. Once the pork is finished lay onto a platter and pour the juices in a medium saucepan. Cook the marinade over medium high heat and whisk in the cornstarch. Cook for a few minutes until it starts to thicken. Pour over the pork.
  4. Garnish with optional lime wedges and fresh chopped coriander.
